When I googled to find the orgin of Kathi rolls, found that it orginated from Kolkata where kathi roll is a famous street food. Many a night, our dinner comprises of either soup, salad, wrap or sandwich. Last night I made Kati rolls with vegetable filling. I introduced the avocado based dip - Guacamole flavor to the roll which worked great as a spread and was SO delicious.
Steps to make Vegetable kathi roll:
- Rinse and chop all veggies finely.
- Heat oil in a pan. Add cumin seeds. Once it splutters, add ginger-garlic paste. Fry it until the raw smell of paste goes away. Then add vegetables and fry it well until golden brown.
- Add paneer and mix it well. Then add, kashmiri mirch powderz turmeric powder,salt to taste.
- Atlast, add chaat masala and lemon juice for tanginess.
- Knead the wheat flour and make the dough smooth.
- Divide the dough into small or medium sized balls. Size of the balls depends on the size of roll you want to make.
- Dust the roll ball with some flour and make thin roll gently. Don't make the roll thick.
- Now, roast the rolls with ghee in a hot pan. You will see golden blisters on both the sides of the roti.
- Now, take a single roti. Spread some tomato and soya sauce in the roti.Place the mixture/stuffing in the centre.
- Sprinkle some chaat masala on top.
- You can wrap them with tissue paper/butter paper and serve hot.
