Steps to make Paneer Moong Kathi Roll:
- Wash and Soak all Daals in a mixing bowl for 3-4 hours. Remove water and transfer it in mixer and grind to a fine paste.
- Transfer the Daal paste in a bowl and add salt. Adjust the consistency of mixture as of chila by adding little water.
- Wash, peel and chop onion, green chilli and ginger. Grate tomatoes and make puree.
- Heat cooking oil in a wok. Add cumin seeds and when cumin seeds splutter put finely chopped onions and ginger and fry till golden.
- Now add tomato puree and cook till oil leaves the karahi. Add mashed paneer and all dry masale and saute for 2 minutes. Add chopped coriander leaves.
- Transfer it in a plate and add lemon juice and mix well.
- Heat a non stick griddle. Brush it with cooking oil and put a ladle full of mixture and spread with the help of spetula. Sprinkle cooking oil around chila and cook on low flame for 2 minutes. Flip the side and roast from other side also. Flip again and place a spoon full of mixture over it.
- Now roll the chilla as shown in pic below π covering the stuffing.
