You can use almond flour or ground almonds, just depends on what you have to hand and the texture of the pancakes you're after. These are far and away the best keto pancakes I have ever made. Fluffy Pancakes made with coconut flour and filled with blueberries. Top with your favorite sugar free syrup for an amazing keto breakfast treat.
Instructions to make Keto Yoghurt and Blueberries Pancakes:
- In a medium bowl, mix the eggs with the vanilla extract until pale and fluffy.
- Add in all the dry ingredients and mix well again.
- Add the greek yogurt, cream cheese and double cream. Using a hand whisk, mix until combined.
- Add 1 tbsp melted coconut oil and the blueberries and mix well.
- Place 1/4 tbsp coconut oil on a pan. On medium heat, heat up the pan.
- Ladle a 1/2 cup of pancakes mix and bake for 3 to 4 minutes. I usually cover the pan to keep the moist in. When the pancake is firm enough, flip it and bake for another minute.
- Serve with fresh blueberries, honey or homemade low carb strawberry jam. Enjoy!
Continue to cook until pancakes are ready to flip. They are ready when the edges firm up and are no longer glossy. Serve with butter and homemade sugar-free syrup if desired. Blueberries and yogurt are her favorite foods. I did make a few slight changes - spelt flour, less salt, almond milk, maple syrup, chia eggs.
