I wanted to come up with something a little bit more festive than just your ordinary shortbread so played around and came up with this. It's basically just my standard shortbread recipe but with the addition of cinnamon and dried cranberries. Essentially this recipe follows the rules of millionaire's shortbread in that it has a base, a layer of caramel and is topped with chocolate. However, mine has a base of rum flavoured sultana flapjack.

  2. Add the icing sugar and cream together with the butter.
  3. Mix together the flour and cornflour in a separate bowl then slowly incorporate into your butter. Beating a bit at a time.

  5. Bake for 7-10 mins depending on the size of your cookies. Don’t allow them to brown. Cool.
