The ingredients needed to make Apple Clafouti:
  1. Make ready 2 Apples
  2. Make ready 1 Tbsp Brown sugar
  3. Take 2 tsp Flavorful liquor such as brandy, spiced rum, or even good whiskey
  4. Take Optional: spices such as ground cinnamon, cardamom - 1/4 tsp each
  5. Make ready 2 tsp Ginger, minced or grated (optional)
  6. Take 3 Eggs
  7. Prepare 1 cup Whole milk (240 ml)
  8. Make ready 1 tsp Vanilla extract
  9. Get 1/2 cup Sugar, whatever type you like (120 ml)
  10. Get Salt a couple pinches
  11. Make ready 1/2 cup Flour (120 ml)
  12. Take to taste Powdered sugar for dusting

Working quickly, pour batter evenly over the fruit. Clafoutis is originally a french dessert (hence the name) and most often associated with cherries. however this apple walnut version is not so bad either! Arrange warm apple slices over batter, reserving juices, then pour remaining batter over apples. Sprinkle remaining sugar and a little cinnamon together and sprinkle over batter.

Steps to make Apple Clafouti:
  1. Preheat oven to 350F/180C.
  2. Grease your baking dish with butter.
  3. Peel the apples and slice into thin wedges. Layout in your baking dish. (In this case, I halved the recipe and used a smaller tart dish).
  4. Sprinkle apples with liquor (if using), some brown sugar, and spices such as cinnamon, cardamom and ginger. Add a few nuts if you want some crunch in the finished product ;) Set aside.
  5. In a bowl, whisk together flour, salt, eggs, sugar, milk, and vanilla until well mixed. Don't worry if there are a few small lumps of flour.
  6. Pour batter over apples.
  7. Put on center rack of oven and bake for about 45 minutes or until light brown and batter has set.
  8. The clafouti will puff up like a monster pancake during the baking but it'll deflate to normal size once it cools.
  9. Let cool for about 10 minutes. Sprinkle with powdered sugar if you like. I love to top this with just a bit of yogurt, or anything creamy like creme fraiche :D
