- First in boiling water put the spinach.
- After a few minutes take it out and put it in cold water so that it does not overcooks and retains it's colour.
- In the mean time cook the minced chicken with salt and pepper. You can add a bit of Kashmiri red chilli powder to it as well (optional).
- Boil the potatoes. After that peel it and mash them up.
- Once the spinach cools down, squeeze them completely and put it in a mixer. Along with mint, make a smooth paste. Please do not add any water. Grind the peas separately.
- Roast the green capsicum and make a paste of it as well. Now mix all the green pastes together(spinach, mint, peas and capsicum).
- In a frying pan add 2 tablespoons of ghee. Add the chopped garlic and sauté. You can also add Carom seeds or cumin seeds if you want to.Once slightly brown pour the spinach mixture and fry it. Once nicely fried, take it out and keep it for cooling.
- In another pan add the gram flour and roast them until they change colour.
- Now add all the ingredients together- spinach, chicken, gram flour, potatoes, raisins, salt to taste. Here I add some chaat masala and dried mango powder to give it a chatpata taste, but it is optional.
- Make round ball or any shape and quote them with bread crumbs. Put the Cashew on top for decoration. Now shallow fry them - 2 mins on each side, just for browning and all ingredients are already cooked.
- Serve them with either mint chutney or tomato sauce.
