- Take 3 cups buttermilk extracted while making homemade ghee OR

- Soak urad dal for minimum 3 hours.

- Once it's blended add salt and whisk the mixture for 4-5 minutes. Keep aside for 15- 20 mins.
- Heat oil in kadai, we your hands and drop small portions of dal mixture in hot oil and fry on low medium flame so that it cooks properly from inside.
- Once it's golden evenly from all sides remove and keep aside.
- For kadi.
- In a bowl take buttermilk and add besan and mix properly so no lumps are formed
- In case you are using curd, whisk curd, water, besan properly for smooth buttermilk mixture.
- In a kadai heat oil add mustard seeds, cumin seeds, hing, methi seeds, grated ginger, red chillies, chopped green chillies, curry leaves and fry tadka on low flame nicely.
- Add the buttermilk mixture and add salt. If the buttermilk is sour you can add sugar to balance the taste.
- Cover and allow it to boil on low flame.
- After 4-5 mins switch off the flame.
- To serve take 3-4 vadas in a bowl, add hot dahi kadi and garnish with coriander leaves and serve it's a very nice dish to start a meal as it has all flavours 😊
